About the Brand

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Denis McCarthy and Ger McCarthy. A food scientist and two deep sea fishermen, respectively, the three men shared a passion for preserving the fine craft of traditional Irish whiskey. West Cork Distillers has become a recognized leader in innovation, distilling and bottling the finest craft Irish whiskey to come out of Ireland.

A classically trained food scientist, John O’Connell turned is interests to producing whiskey with his close friends, the McCarthys. Leveraging his entrepreneurial spirit and passion for the science of creating products – and a love for whiskey – John has dedicated more than a decade to distilling the highest quality Irish whiskey imaginable through both traditional and innovative techniques. And his work has just begun.

The team at West Cork Distillers strives to produce the highest quality Irish whiskey using classical techniques and local resources. With a careful eye for detail, West Cork uses only local Irish-grown grains and barley, local spring water, and copper pot stills in all their whiskey distillation. Taking pride in their heritage, they are committed to providing employment opportunities for the people of West Cork and rely on many Cork-based service providers to deliver their whiskeys worldwide.

Bourbon Cask

A delicate blend of grain and  malt whiskey matured in bourbon casks, delivering a smooth and approachable whiskey with a soft vanilla finish. 40% ABV.

Specialty POS

Black Cask

Prepared by blending malt and grain whiskey before being polish-matured in lightly toasted, heavily-charred #4 bourbon first-fill casks for 6 months. This produces a slightly smoky, vanilla rich, sweet whiskey. 43% ABV.

IPA Cask

West Cork IPA Cask finished blended Irish whiskey is a 75:25 blend of Irish wheat & malted Irish barley, triple distilled in copper pot stills and aged in first fill bourbon casks for four years. The malt and grain components are then blended and aged for an additional 6 months in casks that had held Blacks of Kinsale IPA beer. 40% ABV.

Stout Cask

West Cork Stout Cask finished blended Irish whiskey is a 75:25 blend of grain & malt Irish whiskey crafted using Irish malted barley and Irish wheat, tripled distilled and aged in first fill bourbon casks for four years. The malt and grain components are then blended and aged for an additional 6 months in casks that had held Black’s of Kinsale Stout. 40% ABV.

WEST CORK BLACK RESERVE BOTTLE SHOT

Barrel Proof

Comprised of a malt and grain blend at a ratio of 33:66. Once blended, the product is recessed in exhausted B3 former bourbon casks for 6 months to marry together, resulting in a high-proof whiskey with notes of dried fruits and orange peel. 62% ABV.

Glengarriff Peat Charred Cask Single Malt

This single malt was aged for 4 years in sherry casks before being finished in barrels that have been charred using Peat obtained from the iconic Glengarriff Forest in Southern Ireland. Each barrel is prepared using a proprietary charring device that was hand-built by West Cork Distillers with the guidance of a local fifth-generation blacksmith. 43% ABV.
